I am constantly on the lookout for healthier recipes of classic comfort foods. I was skeptical at first but this recipe really hit a home-run in my house. Joe is not a big fan of sweet potatoes or meatloaf and he LOVED this dish!! If you make it let me know what you think!!

I love sweet potatoes! Yet I don't think I would have ever thought to use them in this way - I'm going to have to give it a try (or some variation of it - I rarely follow recipes to the T). Thanks for sharing!
